Pie of the Month - June
After a brief pie-making hiatus, on a whim, I decided to try to make a key lime pie.

Some comments:
"I don't know how to describe the consistency of it. It's not quite like pudding, but it's not really solid."
"It's... sticky."
"Here, try scooping it out with this spoon."
"I'm not really sure if that's what it's supposed to taste like."
"Maybe it needs more whipped cream."

I LOVE key lime and lemon pies/tarts. My husband bought a delectable key lime pie at La Madeline's bakery, for my birthday a few weeks ago. I'm particular, none of that pale yellow or green stuff because it signifies sickly sweet flavoring. I like it brightly colored because it usually means more tartness. If using a mix, my Mom taught me to throw in a stick of butter and real lemon juice or lime juice as the case may be. It stiffens it up and tartens the taste. Also, adequate refrigeration is crucial.
Just call me "The Queen Of Tarts". Much preferred to my middle school nickname as, "The Queen Of Far.....well, just you nevermind about that.

I'm sorry the consistency wasn't good... you probably didn't cook the custard long enough.
I really shouldn't comment, as I personally do not have the pie gene. I only eats 'em, I don't make 'em.

It looks ok to me, but then again, it is pie. I don't care what you do to pie, it's still pie. And as we all know, pie is good.

One of my favorite books is "The Life Of Pi". Quite honestly though, I only picked it up to read because I thought it was the true story behind the founder of "House Of Pies". What a letdown.

my mom once brought pie to thanksgiving dinner, and none of them had set, so they all had to be eaten with spoons, so to this day, when she shows up with pie, my uncles pull straws out of their pockets.
consistency aside, it looks like it was yummy. as always, i'm proud of your effort.

Never had key lime pie. If it tastes good, that's what matters. Around here, we have a tv ad that describes that indescribable consistency: not quite solid, not quite liquid. They call it a soquid.

I've never had key lime pie either. That might have been part of the problem. I've had key lime pie flavored yogurt, and I like that, so I figured I'd like the pie.

the pie should have been the consitency of "5 minute cheesecake"...in fact, that's DEF what you should make next. it's awesome and is easy peasy.
also, key lime pie is always good with some merengue on there. some egg whites whipped up and spiked up like some dudes hair with gel in it. then all the little "merengue curls" get a little browned and pretty.....
